Crock Pot Black Beans

 Surprising taste, easy to prepare, sure to please!

1 pound dried black beans, rinsed

6 cups low sodium chicken broth, or water, or vegetable broth

2 medium onions, chopped

2 medium carrots, peeled and sliced

1 tart apple, peeled, cored, and diced

12 sprigs parsley, tied together with kitchen string

1 cup light rum

1 (1 ounce) square unsweetened chocolate

1 teaspoon dried thyme leaves

1 teaspoon dried basil

3 garlic cloves, crushed/pressed

2 teaspoons salt

1 teaspoon pepper

 Soak beans in water overnight; drain the next day.  In crockpot, combine all ingredients.  Cover and cook on medium heat 8-10 hours.  Discard tied parsley.  Serve.
